Healthy food for body and mind. From everyday family life to elite sport nutrition

Rooted in the traditional Mediterranean diet, I combine this beloved cuisine with the skills and awareness developed through my work experience  and in-depth studies in sports nutrition, focusing on raw and plant-based ethics. Every plate begins its journey by sourcing ingredients of the highest quality: vegetables, whole grains, legumes, nuts, seeds, fruit, spices and herbs. With the utmost respect, I treat them in the gentlest way possible and combine them according to their qualities to achieve balance, consistency and taste.

Plant based cuisine: organic, whole and seasonal ingredients

My cuisine is based on the beauty of simplicity. I favour a plant-based cuisine, sourcing quality ingredients gifted by mother nature. My philosophy is to apply minimal treatment to retain their nutritional properties and to nurture their natural taste. I believe in working with produce that is whole and seasonal. Wherever possible I introduce different varieties to keep dishes fresh and interesting. I also alternate cooking techniques, including dehydration, fermentation, cold pression and stone grounding.

Healthy eating habits to enhance growth and longevity

Food should nourish your body and foster your mind in the most natural and genuine way. My career focus and personal objectives has shifted from ‘cooking’ for clients, to ‘helping feeding’ them with “honest cuisine”. Far from prohibition or extremism, I believe that through clear, coherent and small practical changes we can create new habits that lead to a deeply rooted food revolution.
