PERSONAL CHEF DAYTIME

4H / ONE MORNING A WEEK

Wellbeing and self-care often begin with how you nourish your body: you can create tasty, wholesome dishes using seasonal ingredients to be enjoyed during the various meals throughout the week, prepared by your Personal Chef one morning a week directly in your home kitchen.

The service includes:

  • Initial consultation and assessment of individual needs, to understand your eating habits and kitchen organization and establish preparation methods and timing.

  • Dish research and planning: before the weekly cooking session, there will be a research phase to identify the best dishes to prepare based on your needs, seasonality, and the balance of ingredients.

  • Shopping list: a detailed list of ingredients will be prepared two days before the weekly cooking session. Upon request, you can delegate the direct purchasing of raw materials.

  • Cooking session: four hours dedicated entirely to meal preparation.

  • Delivery: at the end of each session, a brief introduction to each preparation will be given with suggestions for regeneration, preservation, and serving.

 

FOR ATHLETES

The service includes:

  • Initial consultation and assessment of calorie needs, macronutrient distribution, intolerances.

  • Organization of preparations: planning meals based on training cycles.

  • Pay attention to the origin of the raw materials (often organic, short supply chain or dedicated to vegetable cuisine) and the use of cooking techniques that preserve micronutrients.

  • Logistics management: the chef takes care of the entire supply chain: from the shopping list to the preparation of meals directly in the athlete's kitchen, up to the storage and cleaning of the environment.

  • Ad hoc pre-during and post-workout preparations: from training water to gels, from raw food bars to balanced smoothies.

 

FOR FAMILIES

Personal Chef services for families are increasingly in demand among families who wish to balance the complexity of daily life with a healthy, tasty, and personalized diet. They manage daily meals (lunches, dinners, snacks, and breakfasts) on a regular basis.

The service includes:

  • Meal preparation and cleanup: the chef cooks directly in the family's home. Once meals are ready, he or she will tidy up the kitchen, wash dishes, and sanitize countertops, leaving the space spotless.

A tidy and functional kitchen is key to efficient and enjoyable cooking. Unfortunately, it's often one of the disorganized rooms in the home, where unnecessary items accumulate and take up space. This service reorganizes the kitchen area to create a practical and efficient space.

The service includes:

  • Consultation and assessment of needs and cooking habits, analysis of the current kitchen layout.

  • Identification of any additional utensils/tools to purchase to optimize kitchen space.

  • Tidying up session: on the agreed-upon date, the kitchen reorganization session with the client will last five hours. Space (shelves, drawers, pantry, etc.) will be cleared out, eliminating unnecessary items based on usage and needs, and then reorganizing them strategically and functionally.

 

HOSPITALITY CONSULTING

Marina Tommasi also provides consulting services to restaurants, schools, and sports clubs that need to redefine, develop, and diversify their culinary expertise and grow their businesses.

The service includes:

  • Case study (with on-site inspection and alignment based on client needs, and development of ideas consistent with the identity and functionality of the kitchen).

  • Recipe development and tastings of all stages of dish creation (from ingredient selection with suppliers to cooking, preservation, regeneration, and plating).

  • Staff training on modern cooking techniques (e.g., sous vide, low temperature) or proper preservation criteria.

  • Follow-up and rework, if necessary.

  • Food cost control with existing suppliers and additional consulting if necessary.

 

WELLNESS EXPERIENCES

A retreat is an immersive and temporary experience organized in exclusive locations (historic villas, natural resorts, or luxury farmhouses) for small groups of people to achieve a common goal: physical and mental regeneration and the sharing of a passion. Marina Tommasi collaborates with professionals in the healthy, longevity, and wellness fields such as Ilaria Bertini and Orazio Ragusa.

The service includes:

  • Development of balanced menus based on the retreat activities, focusing on vegetarian, plant-based, macrobiotic, or anti-aging diets, using organic and local products.

  • On-site presence and preparation of dishes, with the option of a cooking demonstration or cooking class upon request.

  • Supplier selection based on the location, favoring local suppliers.

  • Possibility of a full-immersion retreat with a liquid diet (3/5/7 days) with liquid and balanced preparations throughout the day, including decoctions, cold extracts, shots, broths, soups, and herbal teas.

Whether it's passion or a desire to learn how to handle ingredients, you can improve your cooking skills through a package of lessons on different topics.

The service includes:

  • Consultation, assessment, and analysis of your eating habits and the cuisine where the course will be held. A date and time for the lesson will then be set, identifying your areas of interest:

    Breakfast: alternatives to start the day

    Snacks: sweet and savory options for quick snacks

    Alternative proteins: legumes, different types, cooking methods, and variations

    Broths, soups, and cream soups

    Seasonal products and cooking methods

    Raw salads and dressings

    Single ingredient: versatility in all its variations

    Zero-waste cooking

  • Research and preparation: before the cooking class, the dishes will be planned based on your choices.

  • Shopping list: prepare a detailed list of ingredients two days before the cooking session.

  • Cooking session scheduling: on the agreed-upon dates, a 2.5-hour interactive lesson for one or a maximum of three people, covering the selected topics.

  • Remote follow-up: 30-minute call for in-depth discussion and final discussion.
